Watermelon Gazpacho with Feta

It's early August but the heat just keeps dragging on. In the interest of keeping cool I decided to make Watermelon Gazpacho. I've had different versions of this refreshing chilled soup in several restaurants and have always enjoyed it.
I did a little research online to find the perfect version. I settled on one from Tyler Florence for it's simplicity of ingredients. I adapted my recipe from this one by altering the amounts of some of the ingredients to my liking. Here is my version which is healthy and delicious.
Watermelon Gazpacho with Feta and Chives 1 large tomato, (organic if possible)
1 serrano chile, seeds removed and cut into medium dice 3 cups cubed watermelon, seeds removed 1 tablespoon red wine vinegar 1 tablespoon minced shallot 1/4 cup extra-virgin olive oil 1/2 of an english hothouse cucumber, seeded and cut into small dice 1 tablespoon minced chives Kosher salt and freshly ground black pepper to taste 1/3 cup of feta cheese cut into small dice
Directions
In a blender, puree the tomatoes, chile, half of the watermelon and half the cucumber. Pour in the red wine vinegar, olive oil and shallot and pulse a couple of times.
Pour soup into 2 bowls and garnish with diced watermelon, cucumber, feta and minced chives
This is a beautifully refreshing soup to enjoy on any hot summer day.
